Wash and drain dry chicken, pick out and remove membranes and ligaments, and cut chicken into thin slices.

Put chicken on a piece of cling wrap, fold over to cover chicken, and pound into 1/4 cm thick slices with a meat tenderizer or the back of a cleaver.

Put chicken in a large bowl and marinate with soy sauce for 15 minutes.

Juice one lemon and cut the other into thin slices.

Beat egg and blend well with chicken. Put bread crumbs on a plate and bread chicken with crumbs.

Heat 4 tablespoons of oil in a pan over medium heat, reduce to low heat and brown the chicken on both sides. Take out and put on a plate.

In a clean wok, mix lemon juice, sugar, vinegar, white pepper, salt and 6 tablespoons of water, and bring to a boil. Add lemon slices, and thicken sauce with corn starch. Put lemon slices on the chicken and drizzlewith sauce. |
