1 | Wash chicken, use salt to rub chicken (outer and inner), and marinate for 1 hour. |
2 | Boil water (water level should cover chicken). Add in chicken and boil for a while, then take it out. Repeat 3~4 times. |
3 | When water is boiled, add in chicken. When water is boiled again, turn heat off. Cover and soak for about 27 minutes. |
4 | Soak chicken in iced water to let cool. Then drain, chop or slice chicken meat, put onto plate. |
5 | Mix scallion oil ingredients, add in 1 tbsp hot oil, and serve. |
