Grill or bake the beef bones, then cook them in water with the beef tendons and Seasonings②until it boils.

Turn the heat down and continue cooking until the beef broth is reduced to 6 cups.

Season with salt and sugar, remove the ginger slices and the Chinese herbs.

Mash the beef with the chopper and put it into a bowl, then add the minced ginger, cornstarch and seasonings①.

Stir the beef mixture in only one direction, lift the mixture up and swing it back into the bowl until it becomes sticky.

Transfer the beef onto a plate.

Bring the broth to a boil, using a small knife, pick up a little beef and slide them in the broth.

The beef is cooked when it rises to the surface.

Cook for a further minute, put in the baby ginger and minced garlic to serve. |
