De-scale fish, clean out black membrane and blood vessel inside the stomach, wash and drain.

Peel kudzu root and cut into small rectangular pieces.

Soften dried tangerine peel and soak rice bean in cold water for 30 minutes.

Stir fry ginger in oil in the wok, put in fish and brown both sides over medium heat. Add water and bring to a boil over high heat.

Put in pork, rice beans, tangerine peel and kudzu rot, bring to a boil.
