Peel and cut each shallot into four quarters, chop garlic, cut red pepper into chunks and spring onion stems into sections.

Wash and cut chicken into 2 cm cubes, mix with garlic, salt, wine and corn starch, then add oil and marinate for 10 minutes.

Put cashew nuts into a cold wok, add oil to cover nuts completely, and deep fry nuts in low heat until slightly brown.

Remove cashew nuts and absorb excess oil with kitchen towels.

Pour out oil, leaving about 1 tablespoonful in the wok, stir fry shallots over high heat until pungent。
