Use cornstarch and salt to remove fat in grass carp intestines and dirt. Wash thoroughly, drain, cut into pieces, add in seasonings and mix well.

Whisk egg, cut deep-fried fluffy dough stick into 1/2 inch in thickness, soak dried tangerine peel until soft and shred.

Put all of the above Ingredients into clay pot, add in ginger puree, mix well, and place deep-fried fluffy dough stick on top.

Bring a pot of water to boil. Steam grass carp intestines over high heat for 15 minutes. Take it out, then bake in oven at 250°C until water is absorbed and deep-fried fluffy dough stick is crispy. Sprinkle coriander. |
