Get green crab, use toothbrush to remove dirt, and wash.

Steam crab, separate crab meat and roe. Set aside.

Whisk egg white, add in Seasoning (2), mix well, sieve egg white paste, pour into bowl.

Steam egg white paste over high heat for 5 minutes, then turn to low heat and steam for 5 minutes. Take out and set aside.

Heat wok, sauté sliced ginger, then remove.

Add in crab meat and roe, stir fry quickly, then add in seasoning(1), mix well, add oil.

Put stir-fried crab meat and roe on top of steamed egg white. Serve when hot. |
