Fresh straw mushrooms and baby corns blanched respectively. Drain. Set aside.

Broccoli sectioned, cooked for a while in boiling water with a little oil and salt. Drain. Set aside. Pumpkin peeled, pith removed; sectioned.

Vermicelli soaked till soft, sectioned; bring to the boil with 1 cup plain veggie soup; add a little oil, cook over low heat for 2 min. Remove from heat, keep warm.

Preparation of Portuguese sauce: With vegetable oil on wok, gently stir in turmeric powder over low heat; gradually add plain flour, keep stirring to form batter. Add 1 cup plain veggie soup little by little, keep stirring; switch to high heat, add remaining soup ingredients. Season, cook till thickened.

Add pumpkin, simmer for 5-10 min. Add remaining assorted veggies, keep stirring till well flavoured. Finally stir in vermicelli, remove from heat. Stir in coconut milk. Serve. |
