Wash chicken, dice and marinate.

Heat wok with oil. Parboil chicken and drain.

Wash salted fish and drain. Put on plate, sprinkle shredded ginger on top, steam over water for 10 minutes. Let cool and remove bone.

Remove egg shell and beat with a little salt. Heat wok with oil, add whisked egg to stir well. Dish up and shred.

Heat wok with oil. Sauté ginger and garlic puree, add in white rice and shallow fry until loosen. Add in chicken and salted fish, then seasoning and diced shallot. Serve. |
