Preheat oven to 180ºC.

Trim the tenderloin, season with salt and black pepper, and tie with a string.

Heat 2 tbsp oil, sear the tenderloin.

Remove and place into oven, bake for 20-30 minutes (depends on doneness).

Remove the tenderloin, rest for 10 minutes before slicing, then serve with port wine sauce.

Port Wine Sauce: Melt butter in pan, sauté shallot, sprinkle in black pepper, pour in brandy and port wine and bring to a simmer.

Pour in beef stock, and bring to a boil then let simmer at low heat for 20 minutes to reduce into a sauce.

Season and serve. |
